Every great sourdough begins with a great starter. Ours has a name—Edgar Allan Dough—a mature, healthy starter that we’ve carefully nurtured over time. This living culture of wild yeast and beneficial bacteria is the heart of all our sourdough breads, giving them their signature tang, open crumb, and incredible depth of flavor. With Edgar at work, each loaf is a blend of tradition, patience, and artisanal care.
